Nutty, tasty, simply delicious! Fried grasshoppers with chili, roasted mealworms on wild herbs, crickets with honey and sesame, delicious Buffalo worms pralines… these are just a few examples of the delicacies you will find in this book, showing how surprisingly tasty insects are! In many countries they are already considered true titbits – and with good reason! – and they feature on the menu of over 2 billion people. In Europe we are finally discovering their culinary potential, and they are now available for purchase on the internet and in selected stores.
The food of the future, insects are much more than a simple culinary adventure. According to FAO, edible insects contain high quality protein (plus vitamins and fibers), so they are encouraging industrialized countries to overcome prejudice and accept them as “the food of the future”. Insects have a high food conversion rate, e.g. crickets need six times less feed than cattle, four times less than sheep, and twice less than pigs and broiler chickens to produce the same amount of protein. Besides, they emit less greenhouse gases and ammonia than conventional livestock.
In order to be able to feed a growing human population, we need to find alternative solutions to our extant food system, and this book aims at showing one that is practicable, funny and no doubt unusual, to travel your way into the future.
Folke Dammann graduated in Communication Design at the Hamburg Institute of Design and got into the world of edible insects after reading a UN report on insects as the food of the future. Recognizing the value of their low environmental impact, in 2013 he founded “Snack-Insects”, an online shop selling edible insects bred in Europe. Besides running the shop, he is actively involved in information activities and organizes events to break the wall of prejudice that still surrounds the world of insect-based food.
